Melted mozzarella slices on a plain pie. Simple and delicious. I don’t have an exact recipe for my pizza dough, the only exact measurement I know is the flour. The basic recipe is:
Throw all that stuff in a stand mixer and mix it up for 10 minutes until it’s smooth and sticky. Split it into 4 balls, put each in a airtight container lined with olive oil, and let it rise in the fridge for at least 24 hours. I usually let it go for 48-72 hours, but you can use it after 24 if you’re in a pinch. Sometimes, if I’m really in a rush, I’ll just let it rise at room temp for a few hours, but the fridge method is way better. It gives the dough more flavor and makes it easier to stretch out.
The most important part of this whole process is having a good pizza oven. I’ve cooked a ton of pies in the oven and you can really get some good results, but nothing compares to a proper pizza oven. I’ve got an Ooni pizza oven and it does a great job.
Make your pie, throw whatever you want on top, and cook it for 2-3 minutes in the Ooni. I pre-heat it for about 30 minutes before cooking - you can’t really get away without pre-heating it, it’s the only way to get the right crust.
With this thing I get super crispy crust and perfectly cooked crust in under 3 minutes.
Pesto pizza with fresh mozzarella and cherry tomatoes. A personal favorite.
Messed this one up somehow, still tasted great though.
